Jorge and Miriam de Andrés are leading the kitchen with their background learning since childhood from their mother Loles Salvador, who is also a great chef.Cristina and Javier de Andrés, who was awarded in 2015 with the National Gastronomy Award, lead the service.Great hosts looking for the customer to live a unique experience, transmitting their passion for cooking and the world of wine. Always attentive to the small details.

Chef del Grupo La Sucursal junto a su hermano Jorge. Ha heredado de su madre el cariño por el producto de cercanía y su pasión por la cocina mediterránea. Gran conocedora de la macrobiótica, comida energética y plantas medicinales.


Javier de Andres

Director Gastronómico

Director del Grupo La Sucursal. Premio Nacional de Gastronomía 2014. Tras estudiar Filosofía desarrolla su vocación por la Gastronomía, en especial por el mundo del Vino. Profesor en los másteres de Nuevas Tecnologías en la Cocina, Facultad de Económicas, Universidad de Valencia; Máster de Turismo, Universidad de Valencia y Máster de Gestión y Administración hostelera, Universidad Católica.


Loles Salvador

Fundadora

Cocinera y Fundadora del Grupo La Sucursal. Sus hijos han crecido entre fogones y cacerolas, transmitiéndoles el amor por la cocina. Amante del buen producto, en los años 80 tenía un puesto de verduras en el Mercado Central. Más tarde creó el restaurante La Sal en la calle Conde Altea y años después, La Sucursal Restaurante en la avenida Navarro Reverter en Valencia.

Chef del Grupo La Sucursal junto a su hermana Miriam. Su interés por conocer otras culturas gastronómicas le ha llevado a recorrer todo el mundo, asimilando influencias de diferentes técnicas, productos y aromas y que se ven reflejadas en su cocina actual.

Jefa de Sala. Organiza junto a nuestro equipo de profesionales los eventos de empresa, bodas y celebraciones que acontecen en cada uno de los espacios y restaurantes del Grupo. Su permanente sonrisa y su empatía la hacen la perfecta anfitriona.



Together they run the gastronomic restaurants: La Sucursal (one Michelin star in 2005 and two Repsol suns), chosen as the best restaurant in the Valencian Community by the Academy of Gastronomy; Vertical Restaurant (one Michelin star in 2008 and two Repsol suns), Coloniales Huerta (one sun in the Repsol guide), Club Vinos de Autor and the wide gastronomic offer of the emblematic Veles e Vents building.

The gastronomic offer of the Sucursal Group is inspired by creative, market-based cuisine, with a permanent revision of the traditional Valencian recipes, applying the latest culinary techniques, creating a quality brand, which is recognized by the Michelin Guide and the Repsol Guide, amongst others. A balance between creative gastronomy and tradition, together with carefully chosen design of the spaces.

In 2012, together with Heineken Spain, they initiated an educational project which is now a reality, the School of hostelry of the Cruzcampo Foundation, which has its place in Veles e Vents Valencia. Since then, training the next generation is one of the strategic pillars of the Sucursal Group, which allows them to transmit their passion for the kitchen to the students and future professionals.

 

Over the last years, the Sucursal Group has collaborated with the University of Valencia and the polytechnic University of Valencia. It is worth mentioning the patent in 2002 of a vacuum cooking device, marketed under the name of Gastrovac together with the I & D department of Food Technologies. In 2011, together with the Labhuman Institute of the UPV, they developed a complete interactive content to improve the experience in gastronomy environments, this project is endorsed by the Ministry of Industry, Energy and Tourism.
